COFFEES
Our portfolio focuses on different Geisha micro lots with Washed, Natural and Honey post-harvest processes, supplied by different farms specialized in Geisha production in 6 regions of the country. (Nariño, Cauca, Huila, Tolima, Quindío and Santander).
Regardless of the region where the Geisha comes from in Colombia, there is always a main axis in the cup that is its citrus notes, generally represented by lime, lemon, grapefruit, and orange. Many times, they are accompanied by floral elements such as jasmine, and they may have other elements in the cup that vary according to their region, planting height and process.
Planting height is synonymous with good coffee, since higher altitudes generate stronger microclimates with sudden changes in temperature in short periods of time that have a direct impact on the flavor and quality of the cup. The optimal Geisha micro lots are planted between 1,800 and 2,000 meters above sea level.
PROCESS
We have Geishas cafes with the following processes.
WASHED
NATURAL
HONEY
In some cases, post-harvest processes have single or double fermentations in an anaerobic or aerobic manner, where fermentation times can vary the attributes in the cup. We have a team of Q-Graders who analyze all the micro lots, always seeking to select coffees with scores higher than 88 points.
COLOMBIAN ORIGIN
Colombia is the most biodiverse country in the world per square kilometer, it has 311 types of continental and marine ecosystems, 2 oceans and 3 mountain ranges that cross the country from south to north.
This biodiversity is also reflected in the coffee-producing areas of the country, where harvest periods can vary depending on the region, and where the varied characteristics of terrain, rainfall, and temperature generate a wide range of nuances in terms of the notes and complexities of a cup of coffee.
Colombia is subdivided into 32 regions, of which 20 are regions where coffee is produced.
The regions where we focus our sourcing and curation are the following:
